Granola Honey Nut Banana Bread

Container: Use non sticking baking pans.

INGREDIENTS

  • 3 CUPS ALL PURPOSE FLOUR
  • 1 TEASPOON BAKING SODA
  • 1/2 TEASPOON SALT
  • 2 CUPS BROWN SUGAR
  • 1 1/2 CANOLA OIL
  • 1/2 CUP BUTTERMILK
  • 3 EGGS
  • 1 TABLE SPOON VANILLA EXTRACT
  • 1 TABLE SPOON OF BANANA EXTRACT
  • 1 1/2 CUP HONEY-NUT BANANA GRANOLA*
  • 1/2 CUP UNSWEETENED SHREDDED COCONUT
  • 1 CUP FINELY CHOPPED PECANS
  • 1 CUP RIPE MASHED BANANA
  • *HONEY NUT GRANOLA CAN BE SUBSTITUTED WITH ORIGINAL GRANOLA USING 1/2 A CUP OF HONEY.

DIRECTIONS

Preheat oven to 375 degrees F. Mix the Granola with all the dry ingredients in a large bowl. In an other smaller bowl mix together the buttermilk, the eggs, Canola oil , brown sugar. When finish mixing ,incorporate in the larger bowl until well blended. Incorporate the smashed banana at the end. Fill the baking pan (or two small ones) to about 3⁄4, Sprinkle with Granola, Honey nut Banana Granola are preferable ( adding a light taste of Banana) to the Granola bread Bake for 45 to 60 minutes. Use a cake tester in the center to insure proper baking. Remove from oven and let the granola Bread cools down. Remove from baking pans.
