Blueberry Granola Coffee Cake Muffins

Container: Use Non sticking Baking tins. (12 to a tin)

INGREDIENTS

  • 2 CUPS REGULAR FLOUR
  • 1 TEA SPOON BAKING SODA
  • 1/2 TEASPOON SALT
  • 2 EGGS
  • 2 CUPS FRESH BLUEBERRIES
  • 1 1/2 CUP OF ORIGINAL GRANOLA* or HONEY-NUT BANANA GRANOLA
  • 1/2 CUP MELTED UNSALTED BUTTER
  • 1/2 CUP BROWN SUGAR
  • 1/2 TEA SPOON COFFEE EXTRACT
  • 1/2 TEA SPOON VANILLA
  • 1/2 CUP 2% MILK

DIRECTIONS

Preheat oven to 375degrees F. Mix the Granola with all the dry ingredients in a large bowl. In an other smaller bowl mix together the milk, the eggs, brown sugar. add the melted butter at the end. When finish mixing incorporate the ingredients in the larger bowl until well blended. Fill each cup to about 1/2 ,add fresh blueberries add an other layer of batter Sprinkle with Granola, Honey nut Banana Granola are preferable ( adding a light taste of Banana) to the Blueberry Granola muffins.. Bake for a maximum of 20 minutes. Remove from oven and let the Blueberry granola muffins cool down. Remove from baking tins.
Enjoy your Blueberry Granola Coffee cake muffins. Blueberry Granola coffee cake should be served warm. * Original granola and Honey-Nut Granola can be used in equal proportion.
