Apple Granola Breakfast Cake

Container: 1 9X9 CAKE PAN
Prep Time: 40 minutes

INGREDIENTS

  • 1 CUP CAKE FLOUR
  • 1 CUP REGULAR FLOUR
  • 1 1/2 TBS. BAKING SODA
  • 1/4 TBS CINNAMON
  • 1/4 GROUND GINGER
  • 1 TBS VANILLA
  • 1/4 TBS ALMOND EXTRACT
  • 1 1/2 CUP SUGAR
  • 8 TABLESPOON BUTTER (1/2 CUP)
  • 2 LARGE EGGS
  • 4 CUPS CHOPPED APPLES, GRANNY SMITH
  • 1 1/4 CUP GRANOLA* CAN BE SUBSTITUTED WITH HONEY-NUT BANANA GRANOLA. * 1/2 SLICED ALMONDS LIGHTLY TOASTED HONEY CINNAMON SUGAR

DIRECTIONS

Oven at 350, Non Stick cooking spray in pan. Sift all dry ingredients. Mix butter and sugar and mix very well. Add eggs and mix at least another minute. Add extracts and mix well. Add sifted dry ingredients. And mix scraping side of bowl. Fold in apples, mix then the granola or Honey-nut banana granola and sliced almonds. Pour into pan. Sprinkle with Cinnamon sugar. Make sure the sugar is not too sweet but has a good punch of cinnamon. Bake until done, about 40 minutes. The second it comes out of the oven while piping hot squeeze honey over the top sprinkle a small amount of Granola .Let cool. Enjoy your granola Breakfast cake. Slices of Granola breakfast make also a very good snack for kids going to school
